2 Tbs Olive oil

1 lime, zest and juiced

A pinch of Salt

2 Chopped Chives


1 cup Lima Beans, cooked

1 cup Fresh corn, blanched

½ cup Nectarines

½ cup Orange Bell Peppers

½ cup Shallots, chopped

1 cup, Cherry tomatoes, sliced in half

½ cup Hot pepper (jalapeno, habanero, etc)

1 Avocado, diced

Recipe: Add all dressing ingredients into mixing bowl.  In the same bowl add the vegetables.  Mix well and marinate in the refrigerator for no more than 2 hours.
